Another round another race, hosted by the oenologist Fausto Peratoner, we dined in this Agritur, a building dating back to the 1400s surrounded by vineyards in the Avisian hills, along the wine and flavors route, at the base of the Brenta Dolomites.
🛌Next time I will also stop to stay in their resort, I have already seen the indoor pool with a small whirlpool.
🍽The dinner took place with the wines of Fausto Maso Grener in combination.
🍖Typical local dishes, starting from cured meats and homemade pickled vegetables as entrè, the carne salada from Trentino, traditional salami, symbol of the cuisine of the characteristic place of the province of Trento, usually prepared with cuts of beef, beef tongue or leg of horse.
🥰I am becoming more and more passionate about these areas, rich in nature, history and traditions different from mine.
🧀 Inevitable not to eat the dumplings with ossobuco submerged by Casolet cheese with raw milk typical of the valleys of Sole, Rabbi and Pejo in the province of Trento.
Slow food Presidium, we also find it in Val Camonica and at Sebino in Lombardy.
📯Small curiosity and report:
🧀 "Casolet" from "caseulus", a small cheese of very ancient origins, so rooted in the territory that the inhabitants of the valleys where it is produced are called "casoletti".
🥩To finish off a nice cut of beef.
The matching wines are:
🍷Maso Grener Bianco Igt Dolomiti (Chardonnay & Sauvignon, bouquet of white flowers, lily of the valley, crunchy apple, various yellow citrus fruits, aromatic herbs and sweet spiciness, white pepper, light note of nutmeg, fine and refined, ready to drink, fresh and savory).
🍷Maso Grener Vigna Tratta Chardonnay Trentino DOC 2013 (complex on the nose with hints of white flowers, wisteria and jasmine, apple, exotic fruit, lychee and pineapple, yellow citrus, structured and full-bodied wine, persistent and rich in dry extract, elegant closes with a note of softness with aromas of tropical fruit).
🍷Maso Grener Vigna Bindesi Pinot Nero Trentino DOC 2015 (red fruits and black cherries on the nose, with hints of stone and stone, licorice, notes of cocoa with cherries, scent of hazelnut and chilli, in the mouth ripe wild strawberries with a light chilli, mixed with the flavor of wood, persistent, fresh, fairly soft, elegant tannins, full-bodied wine, silky
❤️Evening intensely pleasant in every respect, Fauso's seriousness and professionalism are now known, but the honesty and simplicity of this man accompanied by his great humility and goodness of mind still the part of him that excites!
Thanks Fausto.
